Earth Day 2011
Green is always in style at Mario Batali, Lidia and Joe Bastianich’s B&B Hospitality Group, as well as at Eataly, but in honor of this year’s Earth Day (Friday, April 22nd), sustainability will be interpreted in a myriad of ways. Each restaurant under the umbrella of B&B Hospitality Group (in New York, LA and Las Vegas) has created a special Earth Day menu or dish, highlighting what aspects of sustainability are most important to them.
For Earth Day we'll be featuring a Tasting Menu at Casa Mono:
"Locally Raised Goat with Spring Onions"
First Course: Coach farm goat cheese with ramps, basil oil, fried bread crostini & black pepper
Second Course: Goat loin tartare with melted spring onion sofrito, chives & pickled pearls
Third Course: Confit goat with young green garlic, goat cuajada (yogurt sauce) & micro greens
We celebrate Earth Day all year around utilizing the Union Square Greenmarket for meat, dairy and produce.
Our Earth Day menu features local produce from the following farms:
Bodhitree, LynnHaven, Rick Bishop, Paffenroth, Coach Farms, Lani's,Hawthorne, John Madura
